Asian-Inspired Chicken & Veggie Soup
Try this winter warmer recipe tonight!
Asian-Inspired Chicken & Veggie Soup
Serves: 4-6

200g Cooked Chicken, shredded
200g Ham, sliced
500g Portobello Mushrooms, sliced
500g Button Mushrooms, diced
3 Zucchinis, diced
1 bunch Spring Onions, chopped
2l Chicken Stock
1 tbs Soy Sauce
1 tbs Olive Oil
2 tsp Chilli Flakes
Salt & Pepper to taste


Step 1:
Add olive oil, mushrooms, zucchini and 1/2 the spring onions to a large pot and cook until softened. 

Step 2: 
Add stock, chicken, ham, soy sauce, chilli flakes, the remaining spring onions and salt and pepper. 

Step 3:
Allow to simmer for 20 minutes or until flavours have cooked through. 

Step 4:
Serve & enjoy!
