One Pan Chicken & Vege
12 Chicken Drumsticks
1 Sweet Potato, large
4 Potatoes, medium
2 Celery Stalks
2 Cups Frozen Peas
1/4 Cup Olive Oil
4 Garlic Cloves, crushed
Salt & Pepper to taste
Pre-heat oven to 180 degrees C.
Cut onions into quarters and roughly chop the remaining vege into 2-3 cm pieces.
Wash chicken drumsticks and pat dry with a paper towel - ensure you remove all the moisture as this will assist them in getting crispy and golden.
Add vege to an oven safe baking dish and arrange chicken drumsticks on top. Cover with olive oil and generously salt the chicken skin.
Cook in oven for 45 minutes and ensure you turn the chicken to allow both sides to crisp. Add the frozen peas and continue to cook for an additional 15 minutes or until the chicken is golden brown and cooked through.
Enjoy as is or serve with rice to bulk out the meal for the entire family!
