1 zucchini, grated
1 cup spinach, chopped
1 carrot, grated
½ onion, diced
1 ½ cups rice, cooked & cooled
1 ½ cups cheese, grated
4 eggs, whisked
¼ cup pepitas
Preheat oven to 180 degrees c
Brown onion over a medium heat and add carrot and zucchini. Cook until cooked through and add spinach leaves until soft and wilted.
Remove sautéed vegetables from stove and add to a mixing bowl, combine with rice, cheese and eggs.
Add mixture to a lined baking tray and top with additional cheese and pepitas.
Cook in oven for 25-30 mins or until cooked through and golden.
Slice and serve as a snack or with a side salad as a meal!
